This Caturra lot was fermented in a low-oxygen environment for 50 hours. After fermentation is completed coffee is placed to sun-dried on raised beds in temperature-controlled conditions until the ideal moisture content is achieved.
This coffee is produced by the Nasa Wesx indigenous community of Gaitania. The Nasa Wesx people inhabit various indigenous territories across the departments of Cauca, Huila, and Tolima. Nasa Wesx community works towards the quality and conservation of the environment and has managed to certify all of their coffee as organic.
Gaitania is a village in the Planadas municipality, located in the department of Tolima. Planadas has a rich history that has shaped the warmth and character of its people and the region as a whole. In the past, it was a refuge for political prisoners from the Liberal Party. Over time, the Liberals and Conservatives forged a peaceful relationship, which contributed to the region’s well-known reputation for hospitality and kindness, earning it recognition throughout the country.
