This year we have chosen a stand out from El Salvador as our Christmas coffee.
Los Nogales is a very special and exclusive farm; it was the first farm that the Salaverria bought and it is where Jose Antonio Salaverria, the owner and producer grew up. This lot is the new crop from a plot on the farm named ‘Miramar’ and consists of a red catuai varietal grown at 1,490 masl. The cherries are double soaked – beans are de-pulped with all mucilage removed and soaked in a tank under clean water for 10 to 12 hours. The water is removed and refreshed, and a further 10 hours soaking takes place, before the beans are sun dried on raised beds.
