This coffee is harvested following strict ripeness criteria, later floated and hand sorted to remove any defects. Cherries are exposed to thirty hours of underwater fermentation before being depulped. Parchment is gently washed and then dried under temperature controlled conditions until ideal moisture content is achieved. The result is a jammy body, with green apple acidity and a clean finish, and scored 87.5 when cupped.
100% Caturra, this microlot originated in the Minas Gerais region of Brazil before transplantation, and is a natural mutation of Red Bourbon. Caturra produces more coffee and is more resistant to plant diseases than Bourbon.
