The small town of Monte Bonito located on the slopes of Cerro Bravo has a population of only 1,000.
Coffee growers in the region average only 1-3 hectares of land and they are fully responsible for the management of the farms, picking the coffee and processing.
The coffee cherries are first washed and fermented for 24 hours and then dried. After this process has been completed, the coffee undergoes sugarcane decaffeination which uses the natural molasses in the sugarcane to act as a solvent to remove the caffeine from the coffee.
